Pork tenderloin with apples

Preparation

  1. Heat the oven to 220 C / 425 F. Quarter the apples, remove the cores, then cut each quarter into thick wedges. Peel the onion and cut it into wedges. Remove any visible sinew from the pork and pat it dry with kitchen paper.
  2. Stir the vinegar, maple syrup and thyme together in a small bowl. Divide it between two small bowls: one portion will touch the raw pork, while the other stays aside for serving.
  3. Spread the apples and onion on a baking tray. Toss with 1 tablespoon olive oil, half the salt and pepper, then roast for 15 minutes.
  4. Meanwhile, heat 1 tablespoon olive oil in a large frying pan over medium-high heat. Brown the tenderloin all over for about 5 minutes. Put it on the apples and onion, brush with the portion of glaze intended for the raw pork, then roast for 10 to 15 minutes more. Insert a thermometer into the thickest part; 63 C / 145 F is the point to remove it for resting.
  5. Remove the tray and cover the pork loosely with foil for 5 to 10 minutes; its temperature will rise a little as it rests. Meanwhile, trim the beans and boil them in salted water for 5 minutes, then drain.
  6. Slice the pork across the grain. Serve with the apples, onion and beans, then spoon over the reserved glaze.
