Sausage tomato pasta

Preparation

  1. Put a large pan of water on to boil. Peel and finely dice the onion and garlic. Slit the sausage skins and squeeze out the sausage meat. Roughly tear the basil leaves.
  2. When the water boils, add 1 teaspoon salt and the pasta. Cook until just shy of al dente according to the packet. Before draining, scoop out one cup of the cooking water.
  3. While the pasta cooks, heat the oil in a large frying pan over medium-high heat. Add the sausage meat and break it into small pieces with a wooden spoon. Cook for 5 to 6 minutes, until there are no pink pieces and it has browned patches.
  4. Add the onion and cook for 3 minutes until soft. Stir in the garlic, tomato paste and oregano for 1 minute. Add the tomatoes, season with pepper and simmer uncovered for 8 minutes.
  5. Add the pasta and 100 ml cooking water to the pan. Cook, stirring, for 1 to 2 minutes until the sauce coats the pasta. If it becomes too thick, add more cooking water a tablespoon at a time. Fold in the basil and half the Parmesan, taste, then serve with the remaining Parmesan.
