Stir-Fried Pak Choi with Tofu and Sesame

Preparation

  1. Press the tofu between clean kitchen paper under a weight for 10 minutes to remove excess moisture. Wash the pak choi, remove the root end and separate stems from leaves; cut stems into pieces about 2 cm wide.
  2. Finely chop the garlic and ginger. Cut the tofu into 2-cm cubes and have the soy sauce ready before heating the pan.
  3. Heat the neutral oil in a wok or large frying pan over high heat. Fry the tofu in one layer for 3 to 4 minutes, turning only once the underside is golden.
  4. Add the pak choi stems and stir-fry for 2 minutes. Stir in garlic and ginger for only 30 seconds, until fragrant but not dark.
  5. Add pak choi leaves and soy sauce. Stir for another 1 to 2 minutes, until the leaves wilt while the stems still have a bite.
  6. Drizzle with sesame oil, scatter over sesame seeds, toss once and serve immediately. The tofu should be hot through the centre and the pak choi should not look overcooked.
